You might have noticed, but Charleston is a big supporter of Susan G. Komen, Lowcountry. All over town, stores and restaurants are painting their windows/displays pink in support of October’s Breast Cancer Awareness month. This is an annual campaign to increase awareness of the disease. Here out at Kiawah, we are painting our palates!
“Breast cancer has had a huge impact on many of us at the Ocean Course,” Chef Banta explains. “When given the chance to donate money from our Salmon dish to the Susan G. Komen Fund it made us super excited. The color pink has become an inspiration to find a cure for this awful disease and we are honored to create a plate that will help do just that!”
“This is something that hits close to home for me,” says Chef Jason while we were brainstorming. “I believe in the importance of breast cancer awareness, and I hope we as The Ocean Room can contribute to that. We are excited to highlight our Atlantic Salmon dish as we are using beets here 5 different ways on this dish. Raw, roasted, pickled, beet gastrique, micro beet garnish.”
